How’s that for a title eh? This is a super easy recipe (another one that doesn’t require following the directions exactly). I call it ‘Italian,’ but I am sure a true representative of the Italian heritage would not agree with this statement. In my world, anything with crushed tomatoes, sauce (or gravy as my Italian roommate used to call it), and seasonings that come out of the Italian seasoning shaker is ‘Italian.’ I always feel so long winded…anyways. This recipe is super easy and makes a ton so it is great for dinner and then lunches all week long!
The best part about this recipe is that you can throw it all in the crock pot and go about your day. Leaves more time for the important stuff, like reading blogs, cleaning, and working.
Italian Chicken and Spinach
Ingredients:
3-5 lb chicken breast
16 oz can of crushed tomatoes
16 oz jar of spaghetti/tomato sauce
2 cups fresh or frozen spinach (if using frozen, be sure to drain it!)
1 tsp onion powder
1 tsp Italian seasonings
Sprinkle of garlic powder
1. Trim the chicken breasts and place in the crockpot.
2. Add the remaining ingredients and stir until the chicken is covered.
3. Cook on low for 6-8 hours or high 3-4 hours. (Or until the chicken is cooked through.)
4. Enjoy as is or over your favorite noodles, rice, or my favorite, CRICE!
The finished product: it may not be beautiful, but is nutritious and tasty! You may also need to drain the extra broth (as you can see on my plate). I think it would have helped if I had thawed and drained my spinach. Whoops.
