Breakfast Burrito Bowl

I have been obsessed with Mexican style recipes lately…taco salad, enchiladas, burritos…I think you get the idea. I’ve been dumping homemade salsa and guacamole on everything from eggs to salads to burgers. These nifty mini packets of Wholly Guacamole make this especially easy! So, these cravings inspired today’s throw together breakfast:

Burrito Bowl for Breakfast!

Breakfast Burrito Bowl

Ingredients: (In order of the way that I layered my Burrito Bowl!)

  • 1 cup fresh spinach
  • 1 cup crice seasoned with cumin and chili powder
  • 2 eggs scrambled with 1 Tb onion and 2 Tb black olives
  • avocado or guacamole
  • salsa


1. Scrambled your eggs along with the onion and black olives. While your eggs are cooking, add your seasonings to the crice (preferably left over from last night’s taco salad!). Place your spinach and then the crice in a bowl and microwave until the spinach has softened and your crice is warm.

2. Once your eggs are done, layer them on top of the crice. Add your toppings: tomato, salsa, and avocado. Enjoy!

Don’t forget the coffee!
